Canola oil (not olive, coconut, or sesame)
1 tsp garlic powder
2 medium white onions, chopped
6 cups veggie broth
1 small package of carrots, chopped.
3 TB peanut butter (more or less to taste)
1 TB. Soy sauce
Hot Sauce
To save time put the onions and carrots in a food processor and run it until they are chopped. Place them in a large pot over med-high heat and saute in oil until they are tender. Add the brothe and bring to a low boil. Stir in the peanut butter well and taste. Add more if needed. Add the soy sauce and garlic powder and a couple liberal dashes of hot sauce. Simmer for about 1/2 hour, let it cool, then puree in batches in a blender or food processor until completely smooth.
Once it's smooth, let it sit for a few hours. It definitely tastes better if you let the flavors meld. Once you heat it up, taste again and add for soy/hot content. Serve.
I've always been a pretty healthy eater, but during my radiation treatments Mike convinced me to kick in into high gear and we stopped eating grain products. As a result from middle of February 2007 to August 2007 I've lost nearly 20 lbs and haven't even been trying. These are some of our favorite recipes. OH, Mike's a vegan so you'll notice there's no dairy. Occasionally I'll cook some fish for Quinn and me.
