I've always been a pretty healthy eater, but during my radiation treatments Mike convinced me to kick in into high gear and we stopped eating grain products. As a result from middle of February 2007 to August 2007 I've lost nearly 20 lbs and haven't even been trying. These are some of our favorite recipes. OH, Mike's a vegan so you'll notice there's no dairy. Occasionally I'll cook some fish for Quinn and me.

Meat-less, Spaghetti-less, Spaghetti with Meat Sauce
2 medium sized spaghetti squashes

SAUCE:
1 package of meatless ground beef
2 large cans of crushed tomatoes or about 6 ripe medium sized tomatoes.
1 small can of tomato paste
2 medium yellow or white onions
2 tablespoons of balsamic vingegar
1/4 cup white cooking wine (optional)
basil
oregano
garlic

olive oil
salt
black pepper
nutritional yeast (optional)

Cut the squashes in half length-wise and scrape out the middles with the stringy stuff and seeds. Cover the remaining flesh with olive oil, salt, and pepper. If you are using the microwave put the squash back together and nuke on high for 15 minutes or slightly less. Let it stand for another 15 minutes.

Meanwhile make the sauce. In a medium to large sauce pan over medium-high heat, cover the bottom with a thin layer of olive oil. Dice the onions and place in the pan. Let me cook for about 10 minutes or so then add a heaping spoonful of chopped garlic, more or less to taste. Add the basil and oregan or taste. Cook for another 5 minutes or so. Add the crushed tomatoes and the tomato paste. Cook for 5 more minutes or so. Add the vinegar and cooking wine. Salt and pepper to taste. Let this simmer for together uncovered for 20 minutes or so. Keep tasting along the way and add vinegar, wine, or salt and pepper to taste. When almost finished add the meatless ground beef.

When the squashes are finished cooking, take a fork and pull the "spaghetti" away from the sides. If it's not coming off easily you will need to put the squash back in the microwave for a few more minutes.

Put the "spaghetti" on a plate with a helping of the spaghetti with meatless meat sauce on top. Sprinkle nutritional yeast on top in place of Parmesan cheese.

This recipe would work just fine without the fake meat sauce too ;-)
