I've always been a pretty healthy eater, but during my radiation treatments Mike convinced me to kick in into high gear and we stopped eating grain products. As a result from middle of February 2007 to August 2007 I've lost nearly 20 lbs and haven't even been trying. These are some of our favorite recipes. OH, Mike's a vegan so you'll notice there's no dairy. Occasionally I'll cook some fish for Quinn and me.
Meat-less, Spaghetti-less, Spaghetti with Meat Sauce
Sounds insane, eh? It fooled a picky three year old. I fed it to him and he said over and over "I love spaghetti, Audra. Thank you for the spaghetti!!!"

Vegan Palak Paneer (Spinach & Cheese)
This is a vegan version of the delicious Indian dish.
Japanese Stir Fry
Japanese style veggies with your choice of protein. Super fast, easy, tasty, and low calorie! What could be better? I like to mix some grilled salmon or mackerel in there.
Apple Salad
This is definitely a desert-like dish but can be a delicious side. I actually just made this up one day.

Ok, it's just asparagus and mushrooms but it sounds more exotic that way, doesn't it?
The Most Delicious Soup You've Ever Tasted
Right after Quinn was born a friend cooked up some food and brought it over to us. She used to be a vegan and is a very fine cook. We ate everything and left these odd looking bags of this odd looking orange soup. I finally broke down and tried it only when I was starving. To my amazement it was absolutely delicious!!! We got her recipe and have been making it ever since.
Curry Sauce With...
A word about spices: ONLY buy them at and Indian grocery store. They are the fraction of the cost and infinitely more favorable. This sauce goes well with many vegetable combinations. My Pakastani friend, Masood said my Aloo Matar was just as good as his mom's! :-)
